A few years ago when I was just starting to experiment with baking I decided I wanted to make mini donuts. Armed with a recipe from the depths of the Internet and whatever was in my pantry, I carefully shaped the dough and attempted to deep fry each one in a frying pan. What I ended up with was crunchy, not cooked gooey messes soaked in oil and far from delicious (or healthy). I have lots of admiration for people who deep fry their donuts with excellent results, but after that day I gave up on the donut dream until I stumbled upon a donut baking pan at Bed Bath and Beyond. Until a few years ago, scones were this mysterious biscuit/bread/cake thing that was reserved for fancy cafes and high teas at the Fairmont. I finally had my first scone when I was on vacation in San Francisco and I realized that scones may be amazing at high tea but they’re just as great for a quick breakfast. Despite coming to the conclusion that I don’t have to be in my finest outfit to enjoy a scone, I still had no idea where to begin with making them. Frankly, for the last two years I had zero interest. I thought they would be way too difficult and would require some sort of fancy UK baking technique that I was way too amateur to even attempt. I woke up bright and early Saturday morning with three over ripe bananas and dreams of starting my day with fresh banana bread. I went downstairs, gathered my ingredients and began mixing and mashing and soon my batter was beginning to take shape. I opened the drawer where we keep the pans and everything seemed too flat…I looked a bit further and my standard 9″x5″ baking pan was no where to be found. Panic ensued as I tore apart the kitchen in search of my one and only bread pan. After 20 minutes of searching, my rumbling stomach and heated oven left me no choice: alter the recipe and bring out the muffin tins. You know what’s terrifying? Making your own macarons. The delicate french confection is crisp and light, yet soft and fluffy. It has a soft filling that somehow manages to be sweet but also delicate and flavourful. Macarons are baking perfection, and for far too long I was terrified to make them. As a self taught home cook, I couldn’t even imagine where to begin. Are they more like meringues? Whoopie pies? Cookies? Cakes? Tarts? What’s my starting point?
