Fluffy Banana Donuts

I love bananas.

They’re hands down my favourite fruit and that’s why I rarely leave a grocery store without them. I love them in smoothies, in my cereal, dipped in melted peanut butter…really the possibilities are endless.

I’m always a little crushed when they brown before I have a chance to eat them since as soon as it’s 25% brown covered, I instantly hate eating them on their own. They go from being this majestic snack to this mushy too-sweet mess. But the good news is this always forces me to make something with them.

You can never go wrong with banana bread but sometimes it’s good to do mix it up. These donuts are light and fluffy, crazy easy to make and take no time at all. They’re the perfect solution to your sad brown bananas and your guilt for not eating them in time.

  1. Preheat oven to 375 degrees and thoroughly grease donut pan
  2. Mash your bananas and mix them with the eggs, oil, milk and vanilla
  3. In a separate bowl, mix the remaining ingredients until well combined
  4. Combine wet and dry ingredients with a wooden spoon
  5. Carefully spoon mixture until your donut prepared donut pan until 3/4 full
  6. Bake for 15 minutes or until a toothpick comes out clean

To finish, I melted 1/2 chocolate chips, 1 tbsp oil and 1/2 tbsp water for dipping.
